On the hunt for powerful and pungent Peruvian ginger, we found ourselves in the foothills of the Andes as they descend into the Amazon basin. This high jungle region is called Bajo Pichanaki. With temperatures around 77F (25C) year round, the warmth and heavy tropical rain create an ideal growing environment for ginger. Grown at an elevation of 3200ft (1000m), the slopes allow for excellent drainage, a critical component to successful ginger farming. It is here where we discovered exactly what we were looking for: a rich source of golden Peruvian ginger.
